1 lb. African sweet potatoes
1/4 cup of chopped onions
1 tsp. Cardamon (freshly ground)
1 tsp. Canola oil
1 cup of heavy coconut milk
2 cups of light coconut milk
In a pot, heat the oil and add the onions. Saute until the onions become soft. Add the Cardamon and mix well then add the sweet potatoes. Let it cook for about 5 mins after which add the light coconut milk until the potatoes are partially covered in the coconut milk. Cover and let it cook until the potatoes are done. This usually takes 7-10 min depending on the type of potatoes.
Add the heavy coconut milk and mix it well. Whilst cooking, mash 1 or 2 pieces of potatoes to give it a thick consistency.
Continue to let it cook for an additional 3-5 mins until very little coconut milk is left in the pot. Add salt if needed.
This dish is eaten with cooked vegetables.
