1 sweet potato
2 slices of bread
1 jar peanut butter
Bake sweet potato in microwave approximately four minutes until soft. Cool, peel, and slice one half inch thick.
Spread one hundred percent whole wheat bread with one hundred percent peanut butter. Cover completely with slices of sweet potato, cut to fit and fill entire slice. Top with second peanut butter coated slice. Cut into triangles, lozenges or other desired shapes and serve with your favorite beverage.
