4 medium sized sweet potatoes
1/3 to 1/2 cup buttermilk
1/2 cup crumbled feta cheese
salt and pepper to taste
Wash sweet potatoes and cut into large chunks. Place cut potatoes in a large heavy bottomed pan and cover with water. Bring water to a boil over high heat. Turn heat low and cover pan to keep a steady simmer. Check after 10 minutes to see if potatoes are cooked through. When done, remove pan from heat and drain potatoes. Mash potatoes slightly, then stir in buttermilk and feta cheese. Taste and adjust salt and add pepper to taste.
Once you taste these, you will never want white potatoes again!
