This is a family favorite! It’s like having dessert with your turkey for Thanksgiving, but why wait til turkey day?!
3 c. mashed sweet potatoes (4 raw, bake at 350 for 1 hour)
1/2 c. sugar
1/2 tsp. salt
1/2 c. margarine, melted
2 eggs
1 1/2 tsp. vanilla extract
Topping (see recipe below)
Beat all until smooth with mixer. Place in greased baking dish and cover with topping. Bake at 350 degrees for 45 minutes. (This casserole rises, so allow enough depth in pan to avoid spills.)
Topping
1 c. brown sugar
1/2 c. flour
1/2 tsp. cinnamon
1/2 c. margarine, softened
1 c. chopped pecans
Mix sugar, flour, and cinnamon. Cut in butter and mix in pecans. Spread on top of sweet potato mixture before baking.
